Recipe #6: to me, French Toast is the ultimate weekend treat. Its nostalgic. Its also romantic, in a breakfast in bed kind of way. It feels like a sweet, and yet, it can be passed off as being not totally terrible for you. Even in some cases, reasonably healthy (depending on how and what its made with). This french toast is fluffy, ever so subtly vanilla flavored, so delicious. I personally could not vouch for any brunch as being complete without French Toast present on the table.
This recipe takes 5 minutes to throw together the mix and then roughly 15 minutes to grill all the French Toast. This recipe is sugar-free and lactose-free (unless you top your finished dish with Greek Yogurt, which is your call). Whip this one up during the coming weekend. It will be a perfect on-the-heels-of-autumn-and-moving-into-winter dish.
Fantastic French Toast
1/2 cup of coconut or almond milk
1.5 tsp. vanilla
½ tsp. nutmeg
1.5 tbsp. cinnamon
A loaf of Brioche bread, sliced
Recommended toppings (all optional)
Really, any sliced fruit you might desire. Go wild.
Beat eggs and milk together using a fork. Stir in the spices.
Dip a slice of bread into egg mixture, once on each side, making sure to coat the entire piece. Place the now egg-soaked slice of bread onto a frying pan or griddle, already set to medium heat (make sure the pan surface has been lightly greased with butter or coconut oil).
Grill each side for roughly one minute. Each side will be a light to medium golden brown when finished.
Upon finishing grilling all the slices of bread (this next step is optional, if you want to top your stack of French Toast with a fried egg- see photo below), crack 1 egg (one per French toast serving) onto the already warm griddle. Cook the fried egg, sunny-side up, for roughly 1-2 minutes until done. The egg white should be solid white (no longer translucent).
When eggs are finished, place one fried egg on each stack of French toast. This completes the ensemble. Again though, you don’t have to do this last step with the eggs. Entirely optional. Depends on how daring you’re feeling. And how hungry.
All is best enjoyed warm off the griddle.
Add a side of Greek yogurt (how much, at your discretion) with a spoonful of honey mixed in and topped with berries. Finish off the French toast with maple syrup and/or whipped cream.
Yields 5-6 servings (one serving is two slices of bread topped with one fried egg).
Can store extra French toast for up to 4 days in an airtight container at room temperature.
