Have I got a light, easy, ultra healthy dish for you. This one can also be aptly titled “eggs in hell” if you prefer. I realize this dish isn’t the prettiest of faces, but for what it lacks in looks, it makes up for in taste. Essentially raw, and hitting all the other major health points as well (grain-free, lactose-free and sugar-free). You’ll feel full, satisfied and all the while, enjoying the taste of what you are eating. Imagine that! The perfect dish in tandem with approaching spring.
1 can of chunky, roasted tomatoes (I like the ones flavored with basil)
2-4 eggs, you decide
1/2 an onion, diced (I like red onion but any type will work great)
Red pepper flakes, for sprinkling on top
- Dump the can of tomatoes and chopped onions into a frying pan. Cook on medium heat for 3-4 minutes, until the liquid is bubbling.
- Create a little hole/pocket for each egg, then crack the eggs one by one into the spaces you made in the tomato mixture.
- Once the eggs appear cooked (the translucent egg whites will appear solid) (this takes roughly 3-4 minutes), remove from heat.
- Sprinkle red pepper flakes atop and add on some avocado if you like.
This can serve either one or two people.
