Guilt Free, Light Berry Trifle

Here’s a healthy and fun one for you to throw together.  The best part?  You can make it look lovely and rather fancy, when actually its a cinch to make.  For the cookie crumble inside, I used my healthy gingerbread recipe (gluten/grain free, dairy free and very low in sugar).  For the pudding, I used sugar free/fat free vanilla pudding within which I sprinkled a bit of cinnamon and added a tablespoon of maple syrup.

Here’s how to make this pretty, delectable sweet treat:

Ingredients

2 packages of sugar free/fat free vanilla pudding (make according to instructions on package, except use non dairy milk.  Almond milk, coconut milk, you choose).  Once this is finished, I stirred in one tablespoon of maple syrup and sprinkled in some cinnamon.

Healthy Gingerbread (the recipe can be found here), which you can whip up in less than 30 minutes.

  1. Once you have all the above ingredients ready to go?  Layer them, alternating differing ones, in any glass of your choosing.
  2. Pop in the fridge for 20-30 minutes.  Then enjoy for a guilt free dessert 😀

Leftovers can be covered with plastic wrap and enjoyed over the next couple days.
