Jewel toned Antioxidant Quinoa Bowl

This dinner entrée is super delish, loaded with great-for-your-body ingredients, easy to make, and pretty to boot.  Will you look at those vibrant jewel tones?  Love it.

So, what makes this dish so dang good for you?

Its loaded with the following items…

Kale– one of THE best vegetables for your body, period.

Onions– Another top contender for mucho health benefits offered whenever eating this pungent vegetable.  Anti-inflammatory, anti-cancerous, helping to combat and lessen incidence of all manner of diseases.

Scallions-With many of the same benefits of onions.

Cranberries– loaded with antioxidants, helps lower risk of urinary tract infections, also anti-cancerous, they improve immune functioning, and decrease blood pressure.  (Side note: be careful though when choosing dried cranberries.  Often, these are LOADED with added sugar.  Best to try and get some with little to no added sugar).

Quinoa-gluten free, its not a grain but a seed.  Eaten for thousands of years in South America, only now is it garnering loads of hype here in the US.  Its loaded with 11 essential nutrients, is high in fiber, has a low glycemic index which is great for blood sugar control, and high in antioxidants.  You can read more about Quinoa here.

Pesto– it just tastes awesome 😀

Optional though surely delicious additional add-ons to this Quinoa bowl: baked salmon or chicken, shrimp, avocado, sliced bell pepper, broccoli, potentially black beans or kidney beans.

Salmon Pesto Beauty Bowl

Continuing onward with the healthy, chock-full-of-vitamins-and-minerals, lighter fare trend for recipe #33, I opted to whip up another “beauty” bowl.  The reason these bowls are named as such is because the ingredients found within work wonders for your health.  They are AWESOME for your body.  Hence, I call them a beauty bowl because the foods included literally help with making you glow (both with feeling awesome on the inside and looking fabulous on the outside).

This recipe is gluten-free, sugar-free, very low in lactose, and you could nearly label it a “raw” recipe as well.  To describe a few of the health benefits for each of the included ingredients:

*Salmon can help protect the body from free radical damage.  Its also amazing for hair, skin, eyes, bones, and nails.  Eating salmon can help prevent heart disease.  It can also help with support to brain functioning and eye health.

*Quinoa is high in protein and gluten free.  It has been used to promote healing of the skin.  It can also help with energy metabolism of the brain and muscles.  Just google “why is quinoa good for you” and check it out for yourself.  This seed is being called a “new superfood.”

*Spinach boosts anti-inflammatory and anti-cancer benefits.

Brookes Beauty Bowl

Recipe #13 is the first one to fall into the “raw” category.  I named this one a “beauty bowl” because it is chalk full of good-for-you foods that are AMAZING for both the functioning of your body, as well as the way you look.  Allow me to explain.

In this particular dish, you will find:

Mango– chalk full of antioxidants that can help aid against cancer, unclog skins pores, a lot of vitamins and nutrients to help the body feel fuller, helps strengthen your immune system, and is a great source of iron.

Sweet Potato– keeps skin smooth and cell division running smoothly, regenerates collagen, great for healthy hair and beauty sleep.  Helps keep you feeling full without the glycemic spike that can contribute to blemishes.

Spinach– highly nourishing to the eyes and the liver, and it contains compounds that protect the lining of the digestive tract from inflammation.  Bone strengthening vitamin K is also found in spinach.

Pomegranate– awesome anti-aging powers are found in these tiny ruby seeds.  Prevents aging inflammation in the body, helps keep our circulatory systems young by boosting blood flow to organs and cells.  A powerful cleaner of lymph and blood for clear, radiant skin.
