Long time, no post, I know. With the ushering in of autumn and the beginning of October, I thought something with sweet potato would make for the perfect autumnal entrée. This dish can wear many hats, from sweet snack, to breakfast for dinner or dessert, to one of many platters scattered across the table in a weekend brunching extravaganza.
Super easy to make, filling, lightly sweet, grain free/dairy free and healthier than your typical pancakes. However, still just as scrumptious.

My first coconut flour pancakes!! I have to say, these are far lighter and fluffier than buckwheat ones are. Buckwheat pancakes are delectable, filling and bready. Tasting totally like the real deal, grain and all (yet, without any ;-)). However the coconut pancakes offer a different texture. I am loving the lightness to them.

Second, turmeric. What’s being touted as a new superfood and for good reason. To name just a few of the health benefits potentially earned by consuming this spice: can help prevent breast cancer and skin cancer, a natural painkiller, may aid in boosting metabolism, is used in Chinese medicine to treat depression, etc. Whoa. As most of you know who have looked at this blog, I love pancakes. They are one of the main foods dominating my foodie fantasies. I cannot get enough of this fluffy, lightly sweet, blank-canvas-begging-for-all-manner-of-toppings dish. Pumpkin is also another favorite over here. So versatile and yummy. Cheesecakes, donuts, pastas, lasagnas, cookies and yes, pancakes, all made with pumpkin are just the bomb.
This morning, I discovered what is likely to become my new go-to pancake recipe. Grain-free, lactose-free, sugar-free and nearly raw, this is an awesome one. The two magical ingredients in these are canned pumpkin and almond flour (aka ground almonds). Clocking in at about 250 calories for 4 pancakes, these guys are a sweet deal.
I was skeptical, imagining the taste plain and boring. Nope. It was as though eating pumpkin pie, with strawberries on the side and syrup on top. I downed the entire plate in minutes and was dying for more. YUM.

Ready for the healthiest, lightest in calories pancakes you have ever eaten? And yes, believe it or not, they still taste awesome. These babies are gluten-free, lactose-free and sugar-free. They are filling and awesome for your health, chock full of good-for-you stuff. Topped with berries, they are especially delicious.
They are Paleo and Whole30 compliant as well, if that matters to you.
What the heck is Whole30? Some of you might be wondering. I was asking myself the same question about two weeks ago. Essentially, its a one-month detox for your body. Here is a short article that describes in further detail what, exactly, is Whole30 and why on earth might you consider giving it a try.
Either way though, these pancakes are worth making. For the health benefits, short list of ingredients and yummy taste.

For about 7 weeks straight last year, I ate these almost every day. They are so tasty, surprisingly addicting, and they are REALLY healthy. No gluten, no lactose and they are free of any refined sugar. I would usually whip up a batch and then consume the entire thing in one sitting. I recommend these topped with maple syrup and homemade whipped cream.
Now you can really have your (pan)cake and eat it too, no guilt!!!! These (recipe #43) are light in calories and great for you.
