Autumn is officially here, and with it, you’re looking at an especially happy camper. I’ve lamented my love of and romance towards this particular season in several blog entries on Travels and Trdelnik, so I wont go into too much depth here. For a list of enticing, awesome seasonal activities though, here you go. A recent entry listing several hopefully interesting and inspiring ideas for readers (in addition to waxing on about my adoration of this time of year). In the meantime though, these pancakes.
Gluten/grain free, dairy free and sugar free. Loaded with cranberries and pumpkin, two ultra healthy ingredients. To name a few fun facts…apparently cranberries lower your risk of cancer, help increase urinary tract health, reduce inflammation, and are great for dental health. Pumpkin, don’t even get my started on this one. I love it. A couple of the supposed health benefits: pumpkin is great for joint health, reducing inflammation, helps protect the eyes, and is great for your skin- giving it a glow and preventing premature aging.
Back to the pancakes and how to make this mouthwatering dish. Its an easy one. I eat these several times a week (in varying flavor varieties). I’m willing to bet after sampling them, you might be tempted towards doing the same…;-)

Can you smell it? Yes, its still summer, but autumn is in the air. Just around the corner. Especially for us New Englanders 😉 (So cool that I can say that once again!). Whether or not this excites or depresses you depends on who you are. I think autumn is the ultimate season though. The brisk air, vibrant colors on the trees, autumn nights, leaves rustling in the breeze, bonfires, walks in the woods, hot drinks in hand, bookstores, all things pumpkin flavored. Just a few of the awesome aspects of autumn.

Oh man, its the weekend. And you know what that means…brunching time!! Weekends are for long, luxurious brunches. And this unquestionably means pancakes, at least in my world ;-). A tall stack, ideally doused in maple syrup, couples with eggs and bacon. These ones are filled with several unique flavorings, all tossed together resulting in this loveliness. Both to look at as well as for eating. Pretty, aren’t they?

These carrot cake pancakes are the epitome of a perfect autumnal breakfast. I know, I know, its way to early to be talking about fall just yet. Still reveling within the midst of summer, the season of endless evenings, ice cream, the beach, sundresses and picnicking, and loving every minute. However, while these do scream autumn, they would be equally as tasty during any season or occasion. Breakfast in bed…or for dinner. Sunday brunching. A summer picnic entrée. Holing up inside with some wintery comfort food when its snowing. You name it, these are fabulous anytime.

Happy summer, all!
I know, I know, yet another pancake recipe. This one is to die for though, whoa. Having to actively hold myself back from eating several (as I need them for brunch with friends tomorrow ;-)). These guys are loaded with a variety of fun flavorings and ingredients. Juicy blueberries. The barest hint of floral with a sprinkling of lavender. Poppyseeds, mostly for photogenic purposes. A dash of cinnamon, nutmeg and ginger. A capful of vanilla extract. Get excited, these babies are super yummy.
And on top of all that awesomeness? They are grain-free, dairy-free and sugar-free.

For about 7 weeks straight last year, I ate these almost every day. They are so tasty, surprisingly addicting, and they are REALLY healthy. No gluten, no lactose and they are free of any refined sugar. I would usually whip up a batch and then consume the entire thing in one sitting. I recommend these topped with maple syrup and homemade whipped cream.
Now you can really have your (pan)cake and eat it too, no guilt!!!! These (recipe #43) are light in calories and great for you.

Its always the perfect time for all things pumpkin flavored! This is one of my absolute favorite ingredients to both cook and bake with. Pumpkin pasta…pumpkin cheesecake…pumpkin pie…I cannot get enough!! And autumn is not the only ideal time for chowing down on this super good-for-you ingredient. Much like that silly myth with regard to not wearing white after labor day (who thought of that one, seriously), while pumpkin does tend to be a flavor that goes hand in hand with fall, I think it can and should be eaten in abundance throughout the entire year!!
Here is to luxurious Sunday mornings, brunches that stretch on throughout the morning, breakfast in bed and all things cozy.

Recipe #15 is another top contender for me. I make these far too often. You can customize this one flavor-wise to your hearts content. The sky is the limit. So for a playful and creative cook, this is an especially sweet recipe to add to your repertoire. The other awesome news? These are gluten-free, sugar-free AND lactose-free!
Pancakes. As those of you who have read my previous entries know, pancakes hold a special place in my heart. I adore them. I would eat them every day if I could. For me, pancakes evoke images of cozy, leisurely breakfasts crowded around a cramped table full of friends, lots of laughter and stories filling the air between all of us. Or, of a lazy brunch having rolled out of bed in the golden hours of late morning with a lover, getting ready together and strolling down the street hand in hand, leaves wrestling in the grates as as we huddle against one another and push inside the cafe. We sink down into the comfortable booth, scanning the worn menu but already know what we want (or at least I do). A plate of towering pancakes, warm, syrup dripping down the sides.
Fun fact: these guys are made with buckwheat flour, which is actually a fruit seed. Its not a grain at all. It comes from the same family as rhubarb. And, did you know that buckwheat is awesome for you!?! Its good for your cardiovascular system, helps control blood sugar and may lower ones risk of diabetes, helps prevent gallstones, and has health promoting potential that is equal to or even higher than that of some fruits and vegetables. How cool is that?
