Superfood Pesto Sauce

Recipe #100!!  This ones a sauce, and a damn good one at that.  As long as you have a food processor (you can get a great quality one for just $40 on Amazon.com, and you’ll use it all the time once you have it.  Totally worthwhile purchase), this recipe is finished in mere minutes.

Made with just kale, basil, parmesan cheese, olive oil, cashews and garlic.  Man oh man, I could eat a jar of this weekly.  I basically already do (the store bought kind.  Pesto being close to my heart for years now).  This kind though?  Light-years better.  With a subtle bite from the garlic.  Earthy flavor from the basil and kale.  The parmesan offering the perfect pinch of zest.

Ingredients

1.5 cup of fresh basil leaves

1.5 cup of fresh kale

1/3 cup of cashews

1/2 cup of olive oil

1/2-3/4 cup of shredded parmesan cheese

1 or 2 cloves of garlic (depending on how much of a garlic lover you are ;-))

  1. Toss all of the above ingredients in a food processor.  Turn on for 20-30 seconds or so, until all ingredients pulverized.
  2. Depending on the texture (if you prefer it slightly chunkier or more saucy) you may wish to add a bit more olive oil.  Pulse a handful of times if adding more olive oil.
  3. Taste and make sure you like it.  If in need of more flavor, I recommend a bit more garlic or some more parmesan cheese.  Maybe a sprinkling of onion powder.

This sauce can be stored in any airtight container in the fridge for up about 2 weeks.

Enjoy on all sorts of things!  Pasta, burgers, salmon filet, shrimp, eggs, in quinoa bowls, you name it.  I can find a dish to throw pesto on daily, hourly really.  No problem.
