I know, I know. Again with the pumpkin. You will be thanking me after trying this one though. Like autumn in a bowl. Pumpkin-y, creamy, subtle cinnamon and spice, filling, hearty, lightly sweet and just YUM!!!

That aside though, this makes for a healthy but oh so tasty treat. Like a dessert but it isn’t. The perfect breakfast, snack or healthy sweet. And a super cinch to throw together in just 15 minutes. Get excited!!!
Ingredients
1 cup of old fashioned oats (I use gluten free ones)
1.5 cup of coconut milk (you could also use any non dairy milk or just plain old regular milk)
2-3 tablespoons of chia seeds
1 tablespoon of cinnamon
1/2 cup of canned pumpkin
1 teaspoon of ginger
1/2 teaspoon of nutmeg
2-3 tablespoons of honey
- Stir all ingredients together in a saucepan over medium heat. Mix well until everything is combined.
- Cook for 8-10 minutes, stirring often to avoid burning.
- You will notice the oatmeal is done when the oats have grown slightly in size, looking ever so fluffier.
- Remove from heat. Allow to cool slightly. Enjoy:-D. Drizzle on top with a bit of additional honey if needed.
This recipe is enough to serve 1-2 people, depending on how hungry you are.
Leftovers can be stored in the fridge in an airtight container for up to 3 days.
