Need I remind all you readers of the power of pumpkin?  The health benefits this bright vegetable offers are countless.  Click here for a short list of why pumpkin is AMAZING for your health.  That aside though, this makes for a healthy but oh so tasty treat.  Like a dessert but it isn’t.  The perfect breakfast, snack or healthy sweet.  And a super cinch to throw together in just 15 minutes.  Get excited!!!

Ingredients

1 cup of old fashioned oats (I use gluten free ones)

1.5 cup of coconut milk (you could also use any non dairy milk or just plain old regular milk)

2-3 tablespoons of chia seeds

1 tablespoon of cinnamon

1/2 cup of canned pumpkin

1 teaspoon of ginger

1/2 teaspoon of nutmeg

2-3 tablespoons of honey

  1. Stir all ingredients together in a saucepan over medium heat.  Mix well until everything is combined.
  2. Cook for 8-10 minutes, stirring often to avoid burning.
  3. You will notice the oatmeal is done when the oats have grown slightly in size, looking ever so fluffier.
  4. Remove from heat.  Allow to cool slightly.  Enjoy:-D.  Drizzle on top with a bit of additional honey if needed.

This recipe is enough to serve 1-2 people, depending on how hungry you are.

Leftovers can be stored in the fridge in an airtight container for up to 3 days.
